LENTILS WITH VEGETABLES

INGREDIENTS

Yellow Lentils 1/2 cup ( rinsed )

Fresh Vegetables cut into small pieces ( carrots, green beans, cauliflower, green peas )

1 tablespoon ghee, pinch of turmeric powder, salt, cumin seeds (1/2 teaspoon), chilis, water, fresh coriander leaves ( for garnishing)

Cooking Time : 15 min

Total Time : 25 min

Difficulty Level : easy

Lentils are excellent sources of fiber, protein, vitamin and iron. Iron deficiency is one of the major causes of having poor energy level. This recipe is a perfect combination of all the nutrients which can help to boost energy level, help in weightloss, decrease risk of heart diseases, prevents rapid aging. Eating lentil vegetable soup 2-3 times per week can make you stay lively & younger beyond your years.

INSTRUCTIONS

Heat a pan in medium flame. Add 1 tablespoon ghee. When the pan is heated add cumin seeds and then add lentils. Fry till an arometic smell is generated. Add all the vegetables and fry for 2/3 min. Add all the spices , stir gently and finally add water . Mix well and cover the pan. Let it cook for next 10 min in low flame. Check the vegetables , should be soft and should be mix well with lentils. Finally garnish with coriander leaves & serve.
